Bitter Sweet Coconut Sugar Chocolate Chips
Regular chocolate chips swapped for coconut sugar instead of cane sugar, these bittersweet chips bake the same way but taste a little earthier and less sweet.
What It Is
Three ingredients: cacao paste, cacao butter, and coconut sugar. That's it. Coconut sugar is made from the sap of coconut blossoms and has a subtle caramel undertone that comes through in dark chocolate, especially at this bittersweet level. The result is a chip with a deep, slightly complex chocolate flavor and noticeably less sweetness than a standard bittersweet chip.
The cacao paste gives these real body. Because they start with whole cacao paste rather than processed cocoa powder plus added fat, they melt smoothly and hold their shape well before they do.
What To Do
Use these anywhere you would use a standard bittersweet chip. They work in cookies, brownies, muffins, and quick breads. They also melt well for drizzling over fruit or stirring into oatmeal. Because the coconut sugar brings its own mild sweetness, you may find you want a touch less sugar elsewhere in a recipe, though most standard recipes need no adjustment at all.
Store in a cool, dry spot away from strong smells. Chocolate absorbs odors easily. If your kitchen runs warm, a sealed container in the refrigerator keeps them in good shape.
