What It Is

Broccoli sprouting seeds are regular broccoli seeds selected and tested for germination, sold specifically for growing sprouts indoors. The seeds themselves are small and firm, with a mild, grassy smell. Once sprouted, they develop a bright, peppery bite that is sharper than mature broccoli but without any bitterness.

Sprouting is one of the oldest ways to grow fresh greens in any season. The young sprouts have been a fixture in health-minded kitchens since the 1970s, when home sprouting became widely popular in the United States.

What To Do

Rinse a tablespoon or two of seeds and soak them in a jar of cool water overnight. Drain, rinse again, and set the jar at an angle so air can circulate. Rinse and drain twice a day. In four to six days you have a full jar of sprouts. Keep finished sprouts in the refrigerator and use within a week.

Throw a handful on sandwiches, tacos, grain bowls, or scrambled eggs. They add crunch and a little heat anywhere you might use arugula or radish slices. One tablespoon of dry seeds fills a quart jar.
