Dark Chocolate Almonds

What It Is

Dark chocolate almonds are one of those things that work because the contrast is real: the snap of the chocolate, the crunch of the nut, the slight bitterness against a little sweetness. These use organic dark chocolate at 72% cacao, which puts them firmly on the less-sweet end of the spectrum.

The almonds are dry-roasted before coating, which keeps them from going soft inside the chocolate shell. A thin layer of food glaze gives the outside that familiar shine and keeps them from sticking together.

What To Do

Eat them out of hand, obviously. But they also do real work on a cheese board, scattered next to something aged and sharp, or chopped roughly and stirred into homemade trail mix. A handful alongside a cup of coffee is about as good an afternoon break as you can put together in thirty seconds.

Store them somewhere cool and dry, away from direct light. A sealed container at room temperature is fine for a few weeks. If your kitchen runs warm, the refrigerator works, but let them come back to room temperature before eating so the chocolate blooms back to its best texture.
