Because they are free of dairy, gluten, soy, and most common allergens, they are a go-to for bakers working around dietary restrictions. But plenty of people reach for them simply because they prefer a less sugary chip.
What To Do
Use them anywhere a recipe calls for chocolate chips. They shine in cookies, brownies, and muffins where a little bitterness balances sweetness in the rest of the recipe. Melt them gently over a double boiler or in short bursts in the microwave, stirring between each, for dipping fruit or drizzling over bars.
For cookies, a rough guide is one cup per standard batch. Store in a cool, dry spot and they will keep for months. If your kitchen runs warm, the refrigerator works fine.
