Dark Chocolate Covered Ginger
A chewy cube of candied ginger wrapped in bittersweet chocolate: sweet, spicy, and a little sharp all at once. It is one of those combinations that sounds simple and then stops you mid-bite.
What It Is
Crystallized ginger starts as fresh ginger root cooked in sugar syrup until the pieces turn glossy and slightly firm. The sugar tames the raw heat but does not erase it. That warm, peppery bite is still very much there.
The chocolate here is bittersweet, which means it has enough cocoa to push back against the ginger's sweetness rather than pile on. The result is a candy with real tension to it: sweet, spicy, bitter, all in one small piece. Fair Trade and organic from root to coating.
What To Do
Eat them as they are. That is the main event. A few pieces after dinner sit nicely alongside coffee or tea.
They also do real work in the kitchen. Roughly chop a handful and stir them into cookie dough, brownie batter, or homemade granola. They pair especially well with oatmeal cookies or anything with warm spices like cinnamon and cardamom. Store them in a cool, dry spot and they will keep for several weeks. A sealed container away from heat keeps the chocolate from blooming.
