Cranberries are one of the few fruits native to North America, grown in flooded bogs across the northern United States and Canada. Fresh cranberries are too sharp to eat out of hand, so drying them with a sweetener is the standard way to make them snackable and shelf-stable.

The apple juice here does double duty: it softens the tartness without flattening it, and it keeps the flavor clean. A small amount of sunflower oil keeps the berries from clumping together. The result is chewy, bright, and genuinely tangy.

What To Do

Toss a handful into oatmeal, yogurt, or a grain salad. They're good on a cheese board next to something sharp or creamy. Stir them into muffin or quick bread batter anywhere you would use raisins. They also work well simmered briefly into a pan sauce for pork or chicken, where their tartness earns its place.

Store them in a sealed container at room temperature for a few months, or in the freezer if you bought a larger amount. They do not need to be rehydrated before use, though a short soak in warm water or juice softens them up nicely for baked goods.
