Dried Mangoes
Mango dried down to its bare, chewy essence: nothing added, nothing stripped out, just concentrated tropical sweetness in every bite.
What It Is
These are organic mangoes with all the water pulled out, which leaves the fruit denser, chewier, and noticeably more intense than fresh. One piece carries more mango flavor than two or three fresh slices. The color runs golden to amber rather than the bright orange you see in sugar-coated commercial versions, because there is no added sulfur or syrup here, just fruit.
Mango has been cultivated across South and Southeast Asia for thousands of years and has worked its way into cuisines from India to Mexico. Dried, it travels well into all of them.
What To Do
Eat them as they are, chop them into oatmeal or yogurt, or toss them into a grain salad with lime juice, red onion, and a little jalapeño. They also soften beautifully when soaked in warm water for twenty minutes, which makes them easier to blend into smoothies or chop into salsas and chutneys. They pair well with chile heat, coconut, ginger, and pork.
Store in a cool, dry spot in a sealed container. They keep for several months at room temperature and longer in the freezer.
