Duck River Honey
Wildflower honey from the Duck River watershed, right here in Middle Tennessee. Local bees, local blooms, a flavor that shifts with the season.
What It Is
This is raw honey made by bees working the fields and roadsides along the Duck River corridor in Middle Tennessee. Because it comes from wildflowers rather than a single managed crop, the flavor is never quite identical year to year. It runs floral and lightly fruity, with a warm finish that clover honey from a grocery shelf does not have.
Raw honey is not filtered or heated the way commercial honey is, so it will crystallize over time. That is not spoilage. Set the jar in warm water for a few minutes and it loosens right back up.
What To Do
Use it anywhere you would reach for honey: drizzled over cornbread, stirred into tea, mixed into a simple vinaigrette with olive oil and mustard. It does especially well where the honey is the point rather than background sweetness. Try it on a slice of good cheese, or spooned over plain yogurt with a pinch of salt.
For baking, swap it for sugar at about three quarters the amount and cut your other liquids slightly, since honey adds moisture. Store it at room temperature, away from direct light, and it keeps indefinitely.
