Flaky sea salt finishes a dish the way nothing else can: a light crunch, a burst of salinity, and a shimmer that makes food look like it was made with intention.

What It Is

Flaky sea salt is harvested by evaporating seawater until thin, crisp crystals form on the surface. Those flat, irregular flakes are what set it apart from fine salt or coarse crystal salt. They dissolve almost instantly on the tongue, giving you a clean, bright hit of salt rather than a slow grind.

This is a finishing salt, not a cooking salt. The delicate structure that makes it special collapses with heat and moisture, so using it in a pot of boiling water is missing the point entirely.

What To Do

Pinch it over anything right before it hits the table: fried eggs, roasted vegetables, grilled meat, sliced tomatoes, even chocolate chip cookies or caramel. The flake gives a little crunch and a pop of flavor that fine salt simply cannot replicate. A small amount goes a long way.

Keep it in a small open bowl or pinch pot near the stove so it stays dry and easy to grab. Moisture is the enemy; a lidded jar works fine too, just avoid storing it near the steam of a stovetop. A pinch is usually all you need.
