What To Do

Rub it directly onto chicken thighs, lamb chops, or pork before grilling or roasting. A good starting point is about a teaspoon per pound of meat. It also works stirred into plain yogurt with a little lemon juice for a quick marinade or dipping sauce, tossed with chickpeas and olive oil before roasting, or mixed into the meat for homemade meatballs.

Try it on roasted potatoes with olive oil, or whisked into a vinaigrette for a Greek-style salad. Store in a cool, dark spot and use within a year for the best flavor.
