What It Is

Hawthorn is a thorny shrub that grows across Europe, Asia, and North America, often along field edges and hedgerows. The leaf and flower are harvested together in spring, just as the plant blooms, then dried for tea and tinctures.

It has a long place in European herbal tradition, where it was brewed as a daily tea. The flavor is gentle, a little grassy, faintly floral, and not bitter. It blends easily with other herbs without taking over.

What To Do

Steep one to two teaspoons in hot but not boiling water for ten to fifteen minutes, then strain. It is mild enough to drink plain or sweetened with a little honey. Pairs well with rose hips, lemon balm, or hibiscus if you want more brightness.

Store in a sealed container away from light and heat. Kept dry, dried leaf and flower hold their character for about a year. Use it as you would any herbal tea, on its own in the evening or as a base for a simple herbal blend.
