Late Night Decaf

What It Is
Decaf gets a bad reputation, most of it earned by coffee that was stripped of caffeine and flavor at the same time. This one is roasted locally, which means it was not sitting in a warehouse before it got to you. The beans are certified organic and processed to remove caffeine while keeping enough of the original character to taste like actual coffee.
The roast lands in a range that works well as a standalone cup: enough body to feel satisfying, not so dark that it turns bitter on the back end.
What To Do
Brew it exactly the way you would your morning coffee. Drip, pour-over, French press, and stovetop moka pots all work. Use about two tablespoons of grounds per six ounces of water, then adjust to your taste. Water just off the boil, around 200 degrees, pulls the best flavor without bitterness.
Store whole beans in an airtight container away from light and heat. Grind just before brewing if you can. It is a genuinely good option for anyone who wants coffee after dinner without rearranging their sleep.
