Onion Granules
Dried and ground coarser than powder, onion granules dissolve into sauces and rubs without the sharp bite of fresh onion or the clumping of fine powder.
What It Is
Onion granules sit between onion powder and dried minced onion in texture. They blend smoothly into wet mixtures but still have just enough body to give a little texture in dry rubs. The flavor is mellow and savory, without the pungency of raw onion, which makes them useful when you want onion flavor woven into a dish rather than front and center.
They are a workhorse in spice blends, marinades, soups, and anything braised low and slow. One teaspoon of granules equals roughly a quarter of a medium fresh onion in flavor, so it is easy to adjust to taste without pulling out a cutting board.
What To Do
Stir them into burger patties, meatloaf, or taco meat before cooking. Mix into salad dressings, dips, or sour cream straight from the jar. Add to soup or stew in the first few minutes of cooking so the granules have time to fully hydrate and soften into the broth.
For a quick dry rub, combine with garlic granules, smoked paprika, salt, and black pepper in roughly equal parts. Store in a sealed container away from heat and moisture. They keep well for up to a year before the flavor starts to fade.
