Roasted Almond Butter Stock
One ingredient, ground until creamy: dry roasted organic almonds, nothing else. No palm oil, no sugar, no stabilizers holding it together.
What It Is
This is as simple as nut butter gets. Whole organic almonds are dry roasted to deepen their flavor, then ground until the natural oils do all the work. What comes out is thick, nutty, and faintly bitter in the best way, with a roasted finish that raw almond butter never quite reaches.
Because there are no added emulsifiers, the oil will separate and rise to the top over time. That is not a flaw. It is what real nut butter does.
What To Do
Stir it well before using, especially if it has been sitting. Spread it on toast, swirl it into oatmeal, or thin it with a little warm water and soy sauce for a quick noodle sauce. It works anywhere peanut butter would, with a slightly more mellow, less sweet flavor.
Store it in the refrigerator once opened to slow the oil separation and keep it fresh longer. Let it come to room temperature before spreading if you want it easier to work with.
