Roasted Everything Bagel Cashews
Every flavor on an everything bagel, minus the bagel. These dry-roasted cashews are coated in garlic, onion, sesame, and poppy seeds, and they are genuinely hard to put down.
What It Is
Everything bagel seasoning started as a way to use the seeds that fell off bagels during baking. That blend of garlic, onion, sesame, and poppy seeds has since landed on practically everything, but it works especially well on cashews. The cashew's natural butteriness carries the seasoning without fighting it, and the seeds toast into the coating during roasting, so the flavor sticks.
These are fair trade and organic, which means the cashew farmers were paid fairly for work that is genuinely hard. Cashews require careful hand-processing, and the people doing it matter.
What To Do
Eat them as a snack, or put them to work. Roughly chop a handful and scatter over a grain bowl, a green salad, or roasted vegetables. They bring crunch, salt, and that savory garlic-sesame punch all at once. They also hold up well on a cheese board, next to something creamy like brie.
Store them in a sealed container away from heat and light, and they will stay fresh and crisp for several weeks. If they soften, spread them on a sheet pan and warm in a 300-degree oven for five minutes.
