Roasted Peanut Butter Stock
One ingredient, ground into itself: this is what peanut butter tastes like when nothing else is in the way.
What It Is
Peanut butter made from only organic roasted peanuts has a flavor that commercial jars, loaded with sugar and stabilizers, tend to bury. The oil will separate and rise to the top, which is a sign you have the real thing, not a flaw. Stir it back in before using. The roasting step is what gives it depth, a nuttiness that raw peanut butter simply does not have.
It spreads, stirs, and blends well. Kept in the refrigerator after opening, it holds for several weeks without the oil going stale.
What To Do
Use it anywhere you would reach for a jar from the store, and expect a stronger peanut flavor than you are used to. Spread it on toast, stir it into oatmeal, or thin it with a little warm water, soy sauce, lime juice, and garlic for a quick noodle sauce. It also works well blended into smoothies or used as the base of a salad dressing.
Because there is no added salt, you control the seasoning. A small pinch of salt stirred in before you use it goes a long way. Store in the refrigerator and stir before each use.
