Steel cut oats are the whole oat groat chopped into pieces, nothing more. That minimal processing is exactly why they cook up thick and chewy instead of soft and mild.

Where rolled and quick oats are steamed and flattened, steel cut oats are simply cut. The groat stays mostly intact, so the oat holds its shape through cooking and gives you something to actually chew. They take longer on the stove, but the texture is worth planning around.

They have a faintly nutty, almost savory flavor that rolled oats do not. That quality makes them work in places beyond breakfast. Cooks have long used them in porridge, grain bowls, and even slow-cooked savory dishes where a hearty, starchy base is welcome.

What To Do

Bring one cup of oats and four cups of water to a boil, then reduce the heat and simmer uncovered for 20 to 30 minutes, stirring now and then, until thick and creamy. They puff up considerably, so that single cup feeds three or four people easily. Salt the water. It matters.

Make a big pot on Sunday and reheat portions through the week with a splash of water or milk of choice. Top with anything: brown sugar and butter, a fried egg, roasted fruit, or a spoonful of nut butter. Store dry oats in a cool, airtight spot and they will keep for months.
