What It Is

Yellow popcorn is a specific type of corn bred for one thing: the dramatic pop. Each kernel has a hard, moisture-sealed hull. When heat builds inside, the trapped water turns to steam, the hull bursts, and the starchy interior flips itself inside out. That is popcorn.

The yellow variety is the classic American standard, with a slightly more pronounced corn flavor than white popcorn. It pops to a large, round flake and holds up well under butter, oil, or whatever you pile on top. The deep yellow color of the hull gives the finished popcorn that familiar golden tint.

What To Do

Heat a heavy-bottomed pot over medium-high with just enough oil to coat the bottom. Add three or four kernels first. When those pop, add a single layer of kernels, put the lid on, and shake gently every thirty seconds. Pull from heat when popping slows to one pop every two seconds or so. Salt immediately.

From there, go wherever you like. Browned butter and nutritional yeast. Smoked paprika and olive oil. Cinnamon sugar while it is still warm. Store unpopped kernels in an airtight container at room temperature and they will keep for a year or more.
